Carrot Protein cake



So, I overbought carrots recently, and decided instead of letting them go bad, I would make some Carrot PROTEIN Cake!!

2 eggs
1 egg white
2 1/2 cups of carrots
2 tsp vanilla
1 1/2 cup applesauce
1/2 cup of xyitol
10 packets of truvia(or sweetener of choice)

2 tsp baking soda
1 tsp baking powder
1 1/4 c whole wheat flour
3/4 cup protein powder
1/2 cup of Almonds (crushed)


Combine all wet ingredients in blender, Blend the Carrots first though. Then combine with the dry ingredients. Lastly, add in the crushed almonds.

SO, CARROTS, WET, DRY, THEN ALMONDS! You can also add in 1/4 cup of raisins for an extra special fun time.

A good topping for this bar:
Fat Free Cream Cheese!
